Fisketorvet Food Hall fast food restaurant units were manufactured and installed as four unique builds, each created for a different brand with its own design language and material requirements. Fisketorvet Food Hall fast food restaurant units demanded precise engineering and careful fixing solutions due to the building’s special construction above water and strict installation limitations.
This project included four separate restaurant units produced and installed in the same timeframe: Kung Fu, Miss Mums, Wok Wok, and Zócalo. Although delivered as one coordinated project, each unit required a different approach—from metal-heavy frameworks to refined surfaces in HPL and Corian—while maintaining consistent quality, safety, and operational functionality.

Food halls move fast: multiple brands operate side by side, and opening dates depend on every supplier delivering on time. For Fisketorvet Food Hall, we produced four different fast food restaurant units with distinct layouts, finishes, and construction details—yet all had to be manufactured and installed simultaneously.
The core task was not only to build visually strong units, but to ensure they perform operationally: durable service counters, reliable fixing points, efficient staff workflow, and surfaces that can withstand intensive daily use.

KEY CONSTRAINS
Each unit required its own material logic and construction strategy:
Metal construction-focused units where structural stability and clean detailing were critical
HPL (High-Pressure Laminate) solutions chosen for durability, hygiene, and ease of maintenance
Corian surfaces used where seamless joints, premium appearance, and long-term performance were essential

Balancing different materials within one delivery schedule required strict production planning and clear documentation. Our team coordinated details so each restaurant concept could keep its identity without creating conflicts in installation or technical interfaces.
Because Fisketorvet is built above water, we faced strict limitations when fixing structures into the floor. We had to ensure fixing methods did not exceed a specified depth. This affected base frames, counter anchoring, and any vertical structures requiring stability.
In practice, this meant we had to engineer fixing solutions early, align them with construction constraints, and avoid on-site improvisation. Every screw length, anchor point, and load-bearing connection had to be verified before installation.
